Chicken Breast Crock Pot Recipes

INGREDIENTS
  • 1 cup orange juice
  • 1/4 cup water
  • 1 onion, chopped
  • 1 yellow bell pepper, cut into 1" pieces
  • 4 boneless, skinless chicken breasts
  • 3/4 cup whipping cream
  • Chutney
  • More curry powder
  • Cashew pieces
  • 3 Tbsp. cornstarch
  • 1 green bell pepper, cut into 1" pieces
  • 1 clove garlic, minced
  • 1/2 tsp. salt
  • 1 Tbsp. curry powder
  • Hot cooked rice

PREPARATION

In a 4 quart crockpot, you should  combine orange juice, water, salt,  onion, peppers, garlic, and curry powder and mix well.

Top the mixture  with chicken. Then you should cover and cook on low for about  4 hours.  You should remove chicken and cut into strips. Return to crockpot; cook covered on low for 2-3 hours longer until chicken is thoroughly cooked.

In a bowl,  you should combine whipping cream and cornstarch and blend with wire whisk. Stir into crockpot, turn heat to high, and cook for 15-20 minutes, stirring once, until sauce thickens. Serve over hot cooked rice with chutney, more curry powder, and condiments.

If you have a new, hotter cooking crockpot, cook on low for 5-6 hours. Check the chicken at 4-1/2 hours to see if it is thoroughly cooked.
