- 2 C chopped dates
- 1 C boiling water
- ½ Tsp baking soda
- 3 Tbsp butter, softened
- 1 C brown sugar
- 3 Tbsp yogurt
- 2 Tsp vanilla essence
- 1½ C all purpose flour
- ¾ C chopped almonds
Method:-
- Place the dates in a bowl. Combine boiling water and baking soda; pour over the dates. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in yogurt and vanilla. Add the flour to the creamed mixture alternately with the date mixture, beating well after each addition. Fold in the almonds.
- Pour into a greased 9 x 9-inch square baking pan. Bake in a preheated oven at 350 F/180 C for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool completely.
