Kesaria Rabri Recipe

Kesaria Rabri


Preparation Time: 1 hour

Serves: 5-6 Persons

Ingredients:-
  • Milk – 3 litres
  • Sugar – 350 gms
  • Kewda (Vetivier) essence – 5 drops
  • Pistachio – 20 gms
  • Saffron – a pinch
  • Silver foil (optional) – 2 sheets


Method:-
  1. Mix saffron with 2 tsp of warm milk. Stir with spoon properly and keep aside.
  2. Place the milk in a heavy bottomed pan.
  3. Bring it to a boil, reduce to low heat and stir constantly for 20 minutes.
  4. Now stir after every 5 minutes until the milk is reduced to 900 ml and acquires a granular consistency.
  5. Remove the milk from the flame.
  6. Add sugar and saffron and stir until dissolved.
  7. Then add vetivier and stir cool.
  8. Pour in a serving bowl.
  9. Garnish with pistachio, silver foil.
  10. Refrigerate and serve chilled.
