Cauliflower And Brinjal Curry
Preparation Time: 30 minutes
Serves: 5-6 Persons
Ingredients:-
- Cauliflower, cut into small florets – 1 large
- Brinjal (Eggplant), sliced - 3
- Peas with pods - cut into 1 inch pieces - 1 cup
- Tomato, chopped – 1
- Chopped coriander - 1 ½ cup
- Cumin seeds - ½ tbsp
- Green chilies - 3
- Oil - 2 tbsp
- Salt to taste
- Wash and cut cauliflower to small florets and steam until they are just tender.
- Heat oil and add sliced brinjal and cook on a low heat for 2 - 3 minutes.
- Add the pea pods and continue frying for a couple of minutes.
- Add tomato pieces.
- Grind green chilies, coriander and cumin seeds. Add cauliflower to the brinjal and pea pods. Add salt.
- Finally, add the ground mixture and fry for fw minutes.
- Cook for another 2-3 minutes.
- Serve hot with paratha or roti.
