Chicken Fajita
Have you heard of fajitas? This is a Mexican style wrap that is blended with chicken. It is one of the sumptuous meals that you would taste. It is easy to prepare and can be served to family and friends. Here we would be taking you through the cooking process.


Ingredients

  • 2 limes
  • low-fat natural yoghurt
  • guacamole, cheddar cheese, to serve
  • 1 red pepper
  • 1 skinless, boneless chicken breast, preferably higher welfare
  • 1 teaspoon smoked paprika
  • Small pinch of ground cumin
  • 1 medium red onion
  • olive oil
  • freshly ground black pepper
  • 4 flour tortillas

For the salsa
  • 1 lime
  • Virgin olive oil
  • 1 fresh red chilli
  • 15 ripe cherry tomatoes
  • small bunch of fresh coriander
  • freshly ground black pepper

Method : You should make use of a griddle pan on a high heat . You can deseed and halve the pepper and cut them into thin strips . You can then peel and slice the onions.
To prepare fajitas

You should slice the chicken into long strips. Put the onion, capsicum and the chicken into cumin and paprika. You should squeeze the juice of the lime that is half, drizzle it over your lug of olive oil and added a pinch of pepper.

Marinate for 5 minutes while you make your salsa, chop your chilli, the tomatoes and the coriander and stalks them.

Add  the juice of 1 lime and a good pinch of pepper , add the extra virgin oil and stir in the chopped coriander.

Put all the onion, pepper and chicken with a pair of tongs into a pan to cook for 8 minutes, allow the chicken to turn  golden and then cooked.

You should keep turning the chicken and vegetables and the warm the tortillas
